Tex Mex Pizza in Woodfired Uuni [Recipe]

The Tex Mex Pizza would be great with our Woodfired Nachos and some tequila shots.

That’s a Mexican-themed Uuni garden party in the making! This new and exciting pizza is perfect for your foodie friends who might be looking for something more than a margarita…

Tex Mex Pizza Recipe

Classic Dough
Classic Sauce
Salsa
1/2 tsp chilli powder
1/2 tsp cumin powder
Handful of grated cheddar, or shredded mozzarella
1/2 of a small red onion, sliced into rings
1/4 tin of mixed beans, or refried beans
1 small avocado, sliced
1 small gem lettuce, finely chopped

Method
First, light up your Uuni.

Next, flour your pizza peel and spread the classic dough over the top into a pizza base shape.

Spread a couple of spoons of classic pizza sauce over the base and (if you’re feeling daring) sprinkle the chilli powder and cumin over the top.

Now you can add your cheese of choice, followed by the chopped onion and beans.

Using the peel, slide the pizza into the Uuni and allow to cook for 2-3 minutes.

Remove from the heat and cover the centre of the pizza with a bed of chopped lettuce, and some avocado slices.
Season to taste.

White Pizza (Artichoke, Spinach & Rosemary)

This is a new and unusual white pizza recipe that everyone will love. It’s quick and easy to prepare, and you probably already have most of the ingredients at home!

White Pizza Recipe

Classic Dough
Generous handful of fresh spinach, chopped (or frozen, no need to chop!)
1/2 tub of low-fat cream cheese
3-5 artichokes (from a jar), chopped into halves
Small bunch of rosemary sprigs, chopped if you like
Salt & pepper to season
Grated parmesan (optional)

Method
First, light up your Uuni.

Now spread your classic dough over a well-floured pizza peel.
If you’re using frozen spinach, leave a couple of nests in a pan on top of the Uuni while it heats up.

Once it’s defrosted, stir it into your cream cheese. If you’re using fresh spinach, you can go ahead and stir this in without having to defrost it. Spread the mixture over the pizza base.

Now add your artichoke halves, followed by the rosemary. Place the pizza into the Uuni for 2-3 minutes.

Remove from the heat, add your grated parmesan and seasoning.

Spanish Tapas Pizza in Woodfired Uuni

Bring a taste of Spain to your own back garden with this tapas-inspired vegetarian recipe. With the help of an Uuni, all of your favourite tapas dishes are now combined into one quick and easy woodfired Spanish Tapas Pizza.

Spanish Tapas Pizza Recipe

Classic Dough
Classic Sauce
Manchego cheese, shredded
Small handful of olives
1/2 of a small red onion, sliced into rings
Handful of fresh parsley, finely chopped
1 small red pepper, chopped
Salt & pepper to season

Method
First, light up your Uuni.

Next, spread your classic dough over a floured pizza peel.

Spread a few serving spoons of classic pizza sauce over the dough, followed by the onion, manchego, olives and red pepper.

Now sprinkle with the chopped fresh parsley and put into the preheated Uuni.

Allow to cook for 2-3 minutes before removing from the heat.
Season to taste.

Pepperoni Pizza [Make Your Own Recipe]

The classic Pepperoni Pizza is probably the most popular pizza of all time! It’s not to be messed with…

(BUT if you have a penchant for spicy food and you do fancy messing with it. I would say that our Diablo Pizza recipe would be the perfect place to start!)

Pepperoni Pizza Recipe

Classic dough
Classic sauce
Pepperoni slices
Mozzarella, sliced
Handful of fresh basil to garnish

Method
First, get your Uuni fire going.

While the fire is heating up, flour your pizza peel and spread your classic dough over the top.

Cover with the classic sauce, followed by your sliced mozzarella.

Finally, add your pepperoni slices and slide the pizza into the oven.

Allow to cook for 2-3 minutes, then remove from the heat.
Season with cracked black pepper and garnish with some fresh basil.

Veggie Pizza (Olive, Sundried Tomato & Rocket)

This classic veggie pizza is sure to increase your popularity. Not just with vegetarians, but also with carnivores, omnivores, and (who knows) maybe even the ladies as well!

Veggie Pizza Recipe

 

Classic dough
Classic sauce
Rocket
Olives
Sundried tomatoes
Mozzarella, sliced
Parmesan shavings

Method

First, light up your Uuni.

Prepare your pizza peel with a sprinkling of flour, and spread your classic dough on top. Follow this with a few spoons of classic tomato sauce, and some slices of mozzarella.

Next add the olives and sundried tomatoes. Place the pizza into the hot Uuni and allow to cook for 2-3 minutes. While it’s cooking, you can quickly wash your rocket leaves, and peel a few parmesan shavings into a small bowl.

Remove the pizza from the heat and cover with a mess of parmesan curls and rocket leaves.

Season with black pepper.

Chicken Pizza With Mushrooms & Pesto

It’s not exactly new information that Chicken Pizza is a dish made in heaven. I’m a vegetarian and even I accept this as 100% FACT!

But something that everybody doesn’t necessarily know, is that you don’t need to eat a pot noodle to satisfy your chicken and mushroom craving.

With a 2 minute cooking time, this pizza will actually cook faster. What’s more, it comes with the added bonus of pesto! Win win.

Chicken Pizza Recipe

Classic dough
Classic sauce
Chicken fillets, sliced
2 tsp of basil pesto
Mushrooms, sliced
Mozzarella, sliced
Olive oil
Fresh basil (to garnish)

Method
First light up your Uuni.

While the Uuni’s heating up, pour a dash of olive oil into a frying pan and add the chicken pieces. Season and fry until the chicken starts to turn golden brown. You can do this in your Uuni, or step inside and use your kitchen hob.

While the chicken is frying you can flour your pizza peel and spread your dough over the top. Don’t forget about that chicken though!
Remove your chicken from the heat and place it on top of the Uuni while you add your sliced mozzarella, mushrooms, and some small dollops of basil pesto to the pizza base.

Add the chicken to the pizza and slide into the Uuni.

Allow to cook for 2-3 minutes. Remove from the heat and season to taste.

White Mussel Pizza [Make Your Own Recipe]

We originally had high hopes for a (Connecticut) classic white clam pizza, but alas, the supermarket didn’t have any clams! No complaints however, as this white mussel pizza turned out to be absolutely fabulous!

We made some fantastic wood-fired mussels in the Uuni last year, but we had never tried them on a pizza before. We used a packet of pre-cooked mussels for this recipe, but you can refer back to our older blog post if yours need to be cooked first.

White Mussel Pizza Recipe

Classic dough
Classic béchamel sauce
Mussels (pre-cooked), or if you’re cooking them yourself, click here.
Pine nuts
Olive oil
Fresh basil (to garnish)

Method
Take your mussels out of the packet and place in a bowl. You may not need the entire packet for the pizza.

Next prepare your béchamel sauce.
Once the sauce is ready, it’s time to light up the Uuni, and get ready to prepare your pizza.

Spread your classic dough over your floured pizza peel, and cover the base with béchamel sauce.

Next, add some mussels to the pizza (still in shells), followed by a sprinkling of pine nuts. Remember that you shouldn’t use any mussels that are closed, these are bad.

Slide your pizza into the hot Uuni and allow to cook for 2-3 minutes.
Remove from the heat, garnish with fresh basil and season with black pepper.

Bechamel Sauce Recipe for Homemade Dishes

This Bechamel Sauce recipe is an essential one that will come in handy for lots of delicious dishes. It was actually the first thing I ever learned how to make in home economics class! Granted, the recipe I was taught was a lot less exciting than this one.

There are many more basic versions of this sauce out there, but none as flavoursome as this one! Historically, béchamel sauce was first used in Tuscan and Emilian cuisine, and was soon imported into France by Henry IV’s second wife, Marie de’ Medici. Oh la la!

Although it’s now widely seen as a basic staple of home cooking, it’s still a sauce fit for royalty in our eyes! This versatile sauce is used for loads of great meals, including: lasagne, fisherman’s pie, casseroles, pasta dishes, homemade creamy soups, and (the best dish of all time) cauliflower cheese!

WARNING! Once you start using this béchamel sauce, you’ll never go back…

Bechamel Sauce Recipe

450ml whole milk
1 onion, with skin removed, and chopped in half
1 bay leaf
1/2 a tsp of nutmeg
50g butter
50g plain flour
Salt & pepper to season

Method
Pour the milk into a saucepan, and add the onion halves, bay leaf and nutmeg.

Gently bring the milk to the boil. Allow to bubble gently for 5 minutes, then turn off the heat and leave to infuse for 15 minutes.

While you wait for the milk to infuse, take out a second saucepan and melt the butter over a gentle heat. Once the butter has melted you can start adding your flour. Stir continuously to make a paste. This is called a ‘roux’.

Next, remove the onion halves and bay leaf from the infused milk and discard.

Gradually add the milk to the roux, stirring continuously.
Continue to stir the mixture over a gentle heat for 5-10 minutes, until the sauce has become thick and creamy.

Finally, season with salt and pepper. Remember to keep it on a low heat and stir often until you are using the sauce. If you leave it to go cold or don’t stir it frequently enough, it will solidify.

Vegetarian Goat’s Cheese Pizza in Uuni

We are now entering the realm of spring and summer recipes, and oh what a lovely time of year it is for fresh produce! Let’s all hope for a long summer ahead, with plenty of opportunities to fire up the Uuni with friends and family. Here’s a light, colourful and Vegetarian Goat’s Cheese Pizza recipe to share with them!

Vegetarian Goat’s Cheese Pizza Recipe

Classic dough
Classic sauce
Mixed peppers, sliced
Half a small aubergine, sliced
1 small courgette, sliced
2 tbs goat’s cheese
Olive oil

Method
First light up the Uuni.

Now put your sliced peppers, courgette and aubergine into a small baking tray, drizzle with olive oil and season.

Put them into the hot Uuni and allow to roast for a couple of minutes, rotating as the veg begins to brown.

Remove from the heat.

Now flour your pizza peel and spread your classic dough over the top, followed by some classic tomato sauce.

Next add a few dollops of goat’s cheese and your ready-roasted mixed veg.

Slide the pizza into the Uuni and allow to cook for 2-3 minutes.

The classic pizza margarita is a simple yet delicious recipe; the perfect starting point if you’re new to the world of wood-firing!

Pizza Margarita Recipe

Classic dough
Classic sauce
Mozzarella, sliced
Basil

Method
Light up your Uuni, then get ready to prepare your pizza while it heats up.

Flour your pizza peel and spread the classic dough over the top, followed by your classic sauce.

Next, add the cheese and slide the pizza into the pizza oven.

Allow to cook for 2-3 minutes, then remove from the heat and season with salt and black pepper.

Add a small handful of fresh basil to garnish. Or if you’re cooking for the more fussy of little pizza-party guests, perhaps leave out the ‘green stuff’!
