Diablo Pepperoni Pizza [Homemade Woodfired Recipe]

Pepperoni is famous for being the most commonly ordered pizza. What is it about cured meats that makes the pizza-eating population tick? Even the best recipes can be improved upon, and that’s why we’re taking pepperoni one step further with our new Diablo Pepperoni Pizza recipe.

For a pizza that’s similar to pepperoni and boasts even more delicious meats, we think the diablo deserves a bit more credit for its loveliness. Also, as we’re inveterate fans of spicy food – the added red chilli is a further bonus!

We’ve used frankfurter and chorizo as our extra meat toppings, adding tastes of Spain and Germany to a traditional (and much loved) Italian-American classic.

Diablo Pepperoni Pizza Recipe

Classic dough
Classic sauce
Pepperoni, sliced
1 frankfurter, sliced
Chorizo, sliced
1 red chilli, chopped
Mozzarella, sliced
Basil

Method
First light up your Uuni.
Next spread your classic dough over a floured pizza peel and cover with classic sauce.

Follow this with some slices of mozzarella and chopped chilli.

Add your sliced pepperoni, frankfurter and chorizo to the pizza.

Slide the pizza into the Uuni and allow to cook for 2-3 minutes.

Remove from the heat, season and garnish with fresh basil.

Quattro Formaggi Pizza (Four Cheese)

It took us a while to decide which cheeses we wanted on our classic Quattro Formaggi Pizza also known as the Four Cheese pizza.

In the end we opted for mozzarella, cheddar, blue cheese and feta. We had high hopes that we could somehow fit parmesan into the mix as well. But then that would be a five cheese pizza, and we wouldn’t be able to shout ‘Quattro Formaggi!’ whilst making it.

Or we still could, but it wouldn’t be quite the same!

Quattro Formaggi Pizza Recipe

Classic dough
Classic sauce
Mozzarella, sliced
Feta, crumbled
Cheddar, grated
Blue cheese, crumbled
Basil leaves

Method
Usually lighting up your Uuni is the first obvious step with any recipe, but this pizza is so packed with cheesy goodness, it’s probably wise to prep some it before you get started.
Slice your mozzarella, grate your cheddar cheese and crumble some blue cheese into a bowl.
Next crumble your feta, but keep this separate from the other cheeses as this will be added to the pizza after cooking.
Now light up your Uuni and flour your pizza peel.
Spread your classic dough over the peel, followed by the classic sauce.
Next add your blue cheese, cheddar and mozzarella and slide the pizza into your hot Uuni.
Allow to cook for 2-3 minutes, then remove from the heat and quickly sprinkle with the crumbled feta. The feta will be heated through slightly, but not completely melted.
Season to taste, and garnish with a handful of fresh basil leaves if you like.

Hawaiian Pizza with Ham & Pineapple [Woodfired Recipe]

Aloha! We’re getting exotic with our recipe this week as it’s our last of the chilly month of February. Today it’s the Hawaiian Pizza. Yay!

But did you know that Hawaiian pizza didn’t actually originate in the beautiful and paradisiacal island of Hawaii? It first popped up in Canada, featuring Canadian bacon instead of ham. And now, it’s most popular in Australia. Madness! Regardless of where it came from or where it’s eaten, it deserves every bit of its success and world domination. Here’s our take on this classic pizza recipe.

Hawaiian Pizza Recipe

Classic dough
Classic sauce
Pineapple, skinned and diced
Ham, chopped
Mozzarella, sliced

Method
First light up your Uuni and leave the fire to heat up.
Spread your classic dough over a floured pizza peel and cover with classic sauce.
Now add the mozzarella slices, chopped ham and pineapple.
Slide the pizza into the Uuni and allow to cook for 2-3 minutes.

Scandinavian Pizza (Salmon, Cream Cheese & Lemon)

The classic Scandinavian Pizza with smoked salmon and cream cheese combo is a beauty, just like the Uuni!

Don’t you agree?

This pizza was delicious, and is fast becoming one of our new favourites. Tell those bagels to watch out, because this recipe’s going to give them a run for their money…

Scandinavian Pizza Recipe

Classic dough
Classic sauce
Smoked salmon, sliced
Dill, 2 sprigs
Cream cheese, a few tsps
Mozzarella, sliced
Lemon slices for squeezing
Black pepper

Method
Light up your Uuni, flour your pizza peel and spread the classic dough over the top.
Next add some classic tomato sauce, followed by some slices of mozzarella.
Now add the smoked salmon slices and fresh dill and slide your pizza into the hot Uuni.
Allow to cook for 2-3 minutes and then remove from the oven.
Finally, add a few dollops of cream cheese, squeeze a slice of lemon on top and season with black pepper.

Garlic Bread with Rosemary [Make Your Own Recipe]

Here is our classic Garlic Bread recipe for the Uuni. Don’t be shy about the garlic.

We all love it and those who don’t are just, well… wrong? This is the perfect accompaniment to a pizza party with friends and family. As always, it’s quick and easy to do.

Garlic Bread Recipe

Classic dough
Crushed garlic, 2 cloves
Butter, approx 50g
Rosemary, a few sprigs or a handful of leaves
Extra virgin olive oil

Method
First, light up your Uuni.
While it’s heating up, spread your classic dough over a well-floured pizza peel.
Cover the dough with some melted butter and crushed garlic. Then add some fresh rosemary and slide the dough base into the pizza oven.
Allow to cook for 2-3 minutes.
Remove from the heat and drizzle with some extra virgin olive oil.
Season with salt and black pepper.

The Ultimate Pizza Sauce [Homemade Recipe]

The key to every great Pizza is the Pizza Sauce.

For years, we had trouble finding a pizza whole family likes, so we started making our own. After a while, everybody started to ask for my recipe.

When preparing this sauce, we usually fix enough for three to four pizzas and freeze it. Feel free to spice up the sauce to suit your own family’s tastes.

 

Pizza Sauce Recipe

1 clove of garlic
Olive oil, 1 tbs
Passatta (500g)
Salt, half a tsp
Sugar, half a tbs
Black pepper
Handful of chopped basil

Method
First, chop the garlic.
Put a tablespoon of olive oil into a pan and fry the garlic in the oil. Be careful it doesn’t brown. Keep it on a medium-high heat. Now add the passatta, salt, sugar, black pepper and basil. Simmer on a low heat for 20 minutes.

Uuni Recipes Shoot Day with Rikard Österlund

Last week we broke an Uuni HQ record. We shot 11 Uuni recipes in one morning! It’s hard work making (and eating) all of those pizzas, but someone’s gotta do it. Musn’t grumble!

We were also lucky enough to be able to extend an invitation to our FAVOURITE photographer, Rikard Österlund. You can check out his website here.

He’s taken some fantastic photos, so nobody has to miss out on any of the action. We’ll be posting the first of these classic pizza recipes very shortly, so stay tuned.

Gorgonzola Prosciutto Pizza [Make Your Own Recipe]

Congratulations to all of our Uuni chefs for surviving the first 2 weeks of January. Fear not, the end is nigh! And what better way to combat January blues than with blue cheese? And seasonal produce? Pears are in season until the end of the month, so make the most of it with this delicious recipe.  This time we make the Gorgonzola Prosciutto Pizza with Pears.

This pizza is also a great dish to help finish off some festive fridge-freezer leftovers in a unique and indulgent way. Plus, the classic Italian Gorgonzola cheese originated from (you guessed it!) Gorgonzola, Milan.

So if January’s getting the better of you summer-loving foodies, use this recipe as an excuse to get warmed up next to your Uuni and dream of Gorgonzola sunshine!

Gorgonzola Prosciutto Pizza Recipe

Classic dough
Classic sauce
Prosciutto slices
Sliced pear
Mozzarella
Gorgonzola, or any other blue cheese you have in your fridge
Basil

Method

First get your Uuni fire up and running.
Next spread your classic dough over a well-floured pizza peel, and cover with your classic pizza sauce.
Now top with some sliced mozzarella and crumbled blue cheese, followed by slices of luxurious prosciutto, and sliced pear pieces.
Slide your pizza into the hot Uuni and allow to cook for 2-3 minutes. When it’s ready, garnish with a sprig of fresh basil.

Mussels Cooking Recipe (White Wine and Parsley Sauce)

Happy New Year to our Uuni chefs all over the world! Our first thing of 2015 is the Mussels Cooking Recipe, a perfect tasty recipe to begin the new year in style.

Consider the wine content as a semi hair-of-the-dog! Everybody thinks that mussels are a faff, but those people are wrong! Either that or they haven’t got an Uuni yet. With this quick and easy wood-fired recipe, mussels only take 10 minutes including preparation! And they taste lovely too…

Mussels Cooking Recipe 

1kg mussels
Large glass of white wine
Fresh parsley, chopped
1 shallot, finely chopped
1 pot of single cream

Method
Light up your Uuni and leave it to heat up while you prepare the mussels.
Pour the mussels into a large container filled with cold water and stir them around with your hands to clean them thoroughly.
Throw away any mussels with broken shells.
If there are any barnacles on the shells you can use a sharp knife to scrape them off. While you’re doing this make sure you also cut off any beards from the mussels (the brown wispy bits).
If you find any open mussels, give them a strong tap with your knife or on the worktop. If they don’t close – throw them away. (They are dead and could make you ill.)
Rinse the mussels a final time and drain.
Pour into a pan that could fit into your Uuni. Make sure that the pan is no more than half full. The mussels need space to move in order to cook properly.
Add the wine, single cream and chopped shallot and place in the Uuni to cook for 2-4 minutes.
Remove from the heat and stir in your fresh parsley.
Season and serve.

Prawn Salad with Chilli, Garlic and Avocado

This is a fancy alternative to your standard prawn cocktail. The Prawn Salad is just like a traditional seafood dish with a twist. Beautiful, fast and versatile – just like the Uuni!

Prawn Salad Recipe


450g of prawns
1-2 cloves of garlic, crushed
2 chillies, chopped
handful of fresh parsley
4 tbs mixed seeds
6 tbs olive oil
Fresh salad leaves
1 avocado, sliced

Method
Rinse your prawns in cold water and drain them.
Marinate them for an hour in a bowl with the seeds, garlic, oil, parsley and chopped chilli.
Now light up your Uuni and keep it hot. These prawns cook on a high temperature.
While you’re waiting for the Uuni to heat up, prepare your salad leaves, chop your avocado and serve into bowls.
Pour your marinated prawns into a pan and place in the Uuni for 2-3 minutes, or until golden brown.
Serve the hot prawns on top of your prepared salads and enjoy.
