Classic Pizza Sauce Recipe

1 clove of garlic
Olive oil, 1 tbs
Passatta (500g)
Salt, half a tsp
Sugar, half a tbs
Black pepper
Handful of chopped basil

First, chop the garlic.
Put a tablespoon of olive oil into a pan and fry the garlic in the oil. Be careful it doesn’t brown. Keep it on a medium-high heat. Now add the passatta, salt, sugar, black pepper and basil. Simmer on a low heat for 20 minutes.

  1. Ok, I live in the middle of North America – think rural, remote, the ‘Sticks’. What is Passatta? And what is a suitable, farm fresh alternative? The upside of living in the ‘Sticks’ (where the food is produced!) is that fresh is easily attained. 🙂

    Looking at the UNI 2 – how long does it generally take for it to heat up? Is there any reason I can’t bake no-knead bread in it?


    1. I just got my UUNI 2. It takes very little time to heat up – 10 minutes or so. I think you can bake bread, but you probably want to keep the temperature down a little. Also, be aware that the oven is not very high, so you’re only going to be able to bake flatter loaves, not full size ones.
