Asparagus Pizza with Sweet Potato & Feta Cheese

The combination of sweet potato and salty feta and fresh asparagus flavours makes this Asparagus Pizza one of Uuni’s most popular vegetarian recipes! You get the perfect roasted veggie taste by popping the sweet potato and asparagus in a pan in the Uuni with a bit of oil and seasoning for a couple of minutes prior to topping your pizza with it.

The results: Shazam! Magic.

Asparagus Pizza Recipe

 

– Classic dough

– Classic sauce

– 4 asparagus spears

– 1/2 small sweet potato

– Mozzarella

– Handful of crumbed feta

– Salt & pepper to season

Method

First light up your Uuni.

While you wait for your Uuni to heat up, wash and peel your sweet potato.

Once fully peeled, chop the sweet potato into very small cubes (about 1-2cm).

Now, wash your asparagus spears and chop the ends off. Place the vegetables in a roasting tin with oil and seasoning. (rosemary tastes great in there too!) Take out of the Uuni after a couple of minutes when browned nicely.

Next, spread your classic dough over a well-floured pizza peel and cover with a few tablespoons of classic pizza sauce.

Add a few slices of mozzarella, followed by your roasted asparagus spears and sweet potato cubes.

Slide your pizza into the Uuni and allow to cook for 2-3 minutes. Use your pizza peel to turn the pizza at least once during this time to ensure an even cook and colour.

Once the Asparagus Pizza crusts are looking golden brown, remove the pizza from the heat and crumble a small handful of feta over the top. Season to taste.

Strawberry Pizza – Wimbledon season recipe!

It might sound unusual, but this combination of sweet, juicy strawberries, salty feta and balsamic vinegar is.. ACE! Strawberry Pizza is just great for summer parties and hungry Wimbledon watchers.

Strawberry Pizza with Feta Cheese

 

Recipe

 Classic dough

–  4 medium strawberries, sliced

– 1 tsp honey

– a drizzle of balsamic vinegar

–  a handful of fresh basil

–  crumbled feta

Method

First, light up your Uuni.

Wash your strawberries and slice them up evenly. Leave in a colander to dry.

Now,spread your classic dough over a floured pizza peel.

Bake the stretched pizza base without any toppings for approximately 2 minutes.

Cover the pizza base with your sliced strawberries, feta and fresh basil.

Mix together the honey and balsamic vinegar in a small bowl and drizzle over the pizza. Season to taste (strawberries are great with cracked black pepper!)

Serve: LOVE/LOVE!

Sweet potato pizza with dates, green chilli and feta

A wood-fired pizza that covers all the bases: hot, cool, salty and sweet. Delicious.

Use our classic pizza dough recipe and our sauce recipe.

For the Pizza Toppings:

  • 1 small sweet potato, peeled and halved
  • 2-4 green chillies (depending on preference)
  • 8 dates, stoned and chopped lengthways
  • 200g feta
  • Olive Oil
  • 20g Basil, torn
  • Salt and Pepper

Fire up your Uuni woof-fired oven.
Step 1 Prep your pizza dough
Step 2 Prep your sauce
Step 3 Place the sweet potato in a small tray, roast in the hot oven until soft
Step 4 Crush the sweet potato with a fork
Step 5 Stretch your pizza base on a pizza peel. Add 1 tablespoon of sauce. Spread over the base. Add the sweet potato, crumble on some feta, place on dates and chillies evenly across the pizza.
Step 6 Place in the hot Uuni for 90 seconds- 2 mins, turning midway. Add some basil to the top and serve.
(repeat for each pizza).

Four Cheese Pizza

It took us a while to decide which cheeses we wanted on our classic four cheese pizza. In the end we opted for mozzarella, cheddar, blue cheese and feta. We had high hopes that we could somehow fit parmesan into the mix as well. But then that would be a five cheese pizza, and we wouldn’t be able to shout ‘Quattro Formaggi!’ whilst making it. Or we still could, but it wouldn’t be quite the same!

Recipe
Classic dough
Classic sauce
Mozzarella, sliced
Feta, crumbled
Cheddar, grated
Blue cheese, crumbled
Basil leaves

Method
Usually lighting up your Uuni is the first obvious step with any recipe, but this pizza is so packed with cheesy goodness, it’s probably wise to prep some it before you get started.
Slice your mozzarella, grate your cheddar cheese and crumble some blue cheese into a bowl.
Next crumble your feta, but keep this separate from the other cheeses as this will be added to the pizza after cooking.
Now light up your Uuni and flour your pizza peel.
Spread your classic dough over the peel, followed by the classic sauce.
Next add your blue cheese, cheddar and mozzarella and slide the pizza into your hot Uuni.
Allow to cook for 2-3 minutes, then remove from the heat and quickly sprinkle with the crumbled feta. The feta will be heated through slightly, but not completely melted.
Season to taste, and garnish with a handful of fresh basil leaves if you like.
