Spanish Tapas Pizza in Woodfired Uuni

Bring a taste of Spain to your own back garden with this tapas-inspired vegetarian recipe. With the help of an Uuni, all of your favourite tapas dishes are now combined into one quick and easy woodfired Spanish Tapas Pizza.

Spanish Tapas Pizza Recipe

Classic Dough
Classic Sauce
Manchego cheese, shredded
Small handful of olives
1/2 of a small red onion, sliced into rings
Handful of fresh parsley, finely chopped
1 small red pepper, chopped
Salt & pepper to season

Method
First, light up your Uuni.

Next, spread your classic dough over a floured pizza peel.

Spread a few serving spoons of classic pizza sauce over the dough, followed by the onion, manchego, olives and red pepper.

Now sprinkle with the chopped fresh parsley and put into the preheated Uuni.

Allow to cook for 2-3 minutes before removing from the heat.
Season to taste.

Black Friday Pizza [Make Your Own Recipe]

This Black Friday, will you be queuing up outside your favourite store to bag some bargains, or will your neighbours be queuing up outside your house to get a taste of this luscious Black Friday Pizza?

Black Friday Pizza Recipe

Classic dough
Classic sauce
2 tbsps of homemade Tapaninaho Tapenade
Black olives, pitted and cut into halves
1 small aubergine, chopped
Crushed black peppercorns
Handful of sliced mozzarella
Handful of grated cheddar

Method
First light up your Uuni.
Now spread your classic dough over the pizza peel, and add your classic sauce, cheese, olives and aubergine.
Spread your tapenade over the pizza, or place it in the centre for a more subtle flavour.
Season with crushed black peppercorns.
Place the pizza in the Uuni for 2-3 minutes, or until it looks wood-fired to perfection!

Tapenade – Tapaninaho Homemade Recipe

Tapenade is a traditional Provençal dish consisting of puréed or finely chopped olives, capers, and olive oil.

Its name comes from the Provençal word for capers, tapenas. It is a popular food in the south of France, where it is generally eaten as an hors d’œuvre spread on bread, but sometimes it is used to stuff poultry for a main course.

Recipe
1 garlic clove, crushed
Juice from 1 lemon
250g black olives, pitted and chopped
handful of fresh parsley, chopped
salt and freshly ground black pepper to season
2-4 tbsp extra virgin olive oil

Method
All you have to do for this one-step-wonder is mix all of the ingredients together until they form a paste. If you prefer a finer texture of tapenade you can use a food processor. But it’s not essential.
